The Growth of Specialty Coffee in Indonesia

The specialty coffee movement in Indonesia has been growing for over 15 years. This trend became more apparent in 2010-2011 when numerous coffee shops emerged, fueled by the third wave coffee phenomenon. During this era, coffee consumers were no longer just visiting cafés for the ambiance but also developing a keen interest in coffee origins, processing methods, and brewing techniques (Yandhrie Arvian, et. al., 2018).

    The term "specialty coffee" was first introduced by Erna Knutsen in a 1974 publication in Coffee & Tea Journal, referring to high-quality coffee beans grown in unique microclimates with distinctive flavors (Sarie Febriani, 2018).

    In Indonesia, specialty coffee gained traction through the USAID-funded Agribusiness Market and Support Activity (AMARTA) Project, which aimed to enhance the quality of agricultural commodities, including coffee, by implementing high industry standards.

To be classified as specialty coffee, coffee beans must meet strict criteria set by the Specialty Coffee Association (SCA), including:
✔ A cupping score above 80, evaluated by certified Q-Graders.
Zero primary defects in a 350-gram sample of green beans.
No more than 3 points for secondary defects.
No quaker beans (underdeveloped, unripe coffee beans).
Moisture content must be between 9-13%.
Uniform bean size to ensure consistent brewing quality.
Unique and distinctive flavor profile, validated through the SCA cupping protocol.
